Now is a good time to know some summer BBQ recipes and start getting ready for your barbecue party. Before you go that route, it is necessary to learn a few things to ensure your barbecuing goes easily.
Several different types of meats and side dishes can be used while barbecuing. Pork, beef, and fish are the most used for grilling. While going to your local supermarket, look for meats that are specially cut and packaged for barbecuing.
Traditional side dishes include potato salad, beans, and coleslaw. These sides work well with all the types of meats and are easy to prepare and keep until it is time to eat. Pickles, onions, and relish are need to be included as part of your conventional condiment bar.

1. Marinating before you cook adds flavor, however covering your meat in barbecue sauce can dry the meat out and may even cause it to burn. It is possible since there is excessive amount of fat and sugar that burn easy in most barbecue sauces. Though if you season the meat lightly, it will not have any negative effects and works well.

2. Always spray the cooking area with a nonstick spray prior to you start cooking. This would prevent your meat from sticking when you are rotating or removing it. If your meat sticks and tears, you will lose a big amount of juice, and your meat might dry out.

3. Until the temperature is right, never set your meat on the grill. It will cause the food to burn or dry out due to the fluctuation in temps. When you are using a charcoal grill, be sure that the coals are completely gray before setting the meat on the grill.

4. Searing your meat will lock in the juices and taste, but you will not want to cook your meat at that high temperature for the whole period of time. After you have seared both sides, change the heat to the lower setting. This would ensure that your meat is full of flavor and tender.

5. When cooking the meat, never poke it. Poking the meat will make the juice to leak out. This not only will make your meat dry and look bad, but also can ruin your grill.
